This was actually very good - although would have been much better if we would have used the big shrimp as opposed to mini shrimps - those were too tough to dip into the batter & fry individually. But it still tasted great!!

These were easy to make, and absolutely delicious. I recommend that you dip the shrimp in egg and coconut mixture twice, in order to get more batter onto it.

I was unable to get the coconut & bread crumbs to stick to the shrimp... I saw that some suggested a double dip in the egg whites -- I will try that next time. I also made the Jasmin rice, but the bottom layer burned to the pan... Any rice expert suggestions?

These were very tasty. I served them as part of the main meal. I heated up some orange marmalade and served it as a dipping sauce.

Love coconut shrimp to begin with, but this puts it over the top. I parboiled shrimp 1 minute. After prepping, sauted i min on each side. As Rachel says, PERFECT!
