This recipe was good but I would like to share the way I make Chili Lime corn on the cob.
I take a tablespoon of butter and melt it in a small cauce pan with one tablespoon of chili powder, cook for about a minute to lose the "raw" taste from the chili powder, then add the remainder of a stick of butter and melt. Brush this butter over cooked sweet corn (I usually grill the corn and squeeze a fresh lime wedge over the buttered corn.
I think you will be pleasantly suprised at the flavor punch you get doing it this way.

This was a pretty basic side dish. I made it twice and the first time it was way too bitter with the amount of lime Rachael suggests. Next time I tried less and it was still so so. Make sure to use sweet corn or else the dish kind of tastes flavorless and underwhelming.

My wife and grandchildren love this corn. I first saw Rachel make it several years ago and I am hooked on her talents.

This is a different, new and exciting way to enjoy corn on the cob! The dishes that were served w/ it on the show all complimented each other and this was no different. Definately try if youre a sweet corn on the cob lover!

I love corn on the cob so much as it is, I've always been afraid of messing with. But I tried this recipe this afternoon and it was an instant hit with not only me, but my 8 year old (who also loves corn and even my husband who isn't much of a corn eater. This was fantastic and so little effort to dress up an old favorite. I microwaved the corn (wrap in wax paper, 2 minutes for 1 ear, an additional minute for each additional ear to make it even less fuss. WONDERFUL!

We love our corn this way! I have made this several times and everyone loves the flavor. We will never go back to plan butter and salt again!
