    this is a very quick and easy corn bread recipe. It is a great way to come out with moist and delicious corn bread...you can even adjust it to your family's taste quite easily.

    I had a "mexican night" this was the only dish i had no left-overs of! It's wonderful! Oh, but I used diced jalepeno instead of the onion.

    My husband liked it but thought it would have been better with the pepper jack cheese. I used plain jack cheese because I don't like spicy. Will definitely make again.

    My corn bread fell apart-and i DID have an egg in it--HOWEVER--it was probably my own fault cuz i baked it in 360 oven instead of the recommended 400? 450? cuz of the other things in the oven. i had to bake it 45 minutes to get it done at that temp. Also- i probably should have let it cool before removing from pan..? Was REALLY YUMMY tho!! I did like that it was simple yet different. I will try it again at the proper temp!!!

    I love corn bread so this was a nice twist on the regular bread! Although, I was not a big fan of the corn kernals. They were too hard. Other wise this was great!

    I found this recipe to fall apart easily and was a little bit grainy. I plan to try a different corn muffin mix and try again but I am curious to see if you can add an egg for a little emulsification.
