    I made these with her entire "Irish Breakfast" menu and they were the star of the show!! My husband was very impressed with how fluffy and delicious they were. The Irish butter and cheese were $13.00/lb at my store, so only bought 1/2 pound of each. The butter definately made a difference, not sure the cheese did. I think we have some sharp cheddar here in the US that would have been just as good. Yes, it is a very simple egg recipe, but it is very good and goes well with her Irish menu! Good job Rachel!

    I usually add some chopped, fresh cilantro leaves (the amount varies according to eggs used. I like the lemony freshness that it gives the dish. I add them right before finishing the last stirring so they keep their flavor.

    Guys, seriously, it's part of an entire menu. There are recipes on this website for simple salads, because the chef included a salad as a side dish and the recipe got transcribed and put on the website! Relax! She's not treating us like idiots, she's just making a yummy breakfast of eggs, sausage, and baked beans. BTW, that does sound like a pretty traditional "Irish Breakfast" (or "English Breakfast" if you're in England. I mean, that's what it is, guys. This is the quintessential English breakfast menu, though it's served throughout the UK and clearly she had it in Ireland once, and it's eggs, sausage, and beans on toast. So get over it!

    (Seriously... there's like 50 deviled eggs recipes on foodnetwork.com ... does anyone need a recipe for that either? Of course not!

    And yes, it's yumm-o. I mean, duh, it's breakfast, which basically rocks!

    I liked the eggs, they were very fluffy and had a nice flavor. I waited too long to mix in the cheese. Definately mix in the cheese when they are very soft. Also 8 oz. of cheese seemed like alot of cheese.
