    These were good. I too only used 1 pack of chopped spinach and it was plenty. My grocery store didn't have steat tomatoes because they are not in season so I just used 4 hot house tomatoes. The only thing I did not care for was the blue cheese on top-it was was too strong and my boyfriend thought so too. We both think that we'll try a medium sharp cheddar cheese next time-other than that they were delicious.

    Pretty yummy! I used half and half instead of cream, since that's what we always have in the fridge. I also only used one box of spinach. Turned out great! Wish that I had salted and peppered the inside of the tomato before I stuffed it. The tomato itself was a bit bland, but we seasoned it at the table.

    Love, love, love this recipe. Always get rave reviews!!! Although I have never made it for date night, I have brought this to potluck, tailgating, welcome parties, and showers as finger food. I buy smaller tomatoes so they are bite size and stuff them as directed. Makes a beautiful presentation, and are so full of flavor. Thanks, Rachel!!

    I used a box of fresh spinach leaves and cooked them while the cream was cooking. I cooked the spinach in avocado oil to add more flavor. I also used feta cheese on top out of preference. This side dish was easy to make and tastes great. Next time I will probably use cream cheese or boursin cheese to put in the tomato instead of the cream.

    I love tomatoes and was looking for recipes with spinach in an effort to eat more healthy. I wasn't crazy about this because i didn't like the texture of the spinach. I think it had too much spinach and not enough other ingredients. I also used the fat free half and half. I think if I would have used the heavy cream it would have had a lot more flavor to it.

    VERY tasty. Replaced the cream with fat free half and half - healthy and delicious!! I also used parmesan instead of the blue cheese, out of personal preference.
