Ingredients
  • 4 ears corn on the cob or 2 boxes frozen corn kernels, 10 ounces each
  • 2 tablespoons butter
  • 1 rib celery and greens, chopped
  • 1/2 small red bell pepper, chopped
  • 2 scallions, chopped
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper
  • 1/2 cup half-and-half
Directions

Scrape corn from cobs. Heat a medium skillet over medium heat. Add butter and chopped vegetables and lightly saute for 3 minutes, then add corn and season with thyme, salt and pepper. Cook 5 minutes, then add half-and-half. Cover and cook over medium low heat 10 minutes. Uncover and stir, then adjust seasonings.

    I never thought thyme and corn would taste so good together. This recipe was so simple to make and tasted great. I used frozen corn and omitted the celery (simply because my husband and I don't like it).
    I made this with frozen corn and it turned out awesome. Everyone thought I had made it with fresh cobs of corn.
    I used frozen corn, and made sure the corn did not thaw before cooking. I also added a little extra half and half. Very good recipe that had a good texture to it.

    I made this recipe after watching her show this past week. It was VERY simple, quick and DELISH!! Its the first recipe I've tried of Racheal's. I used the frozen corn because I did not have fresh. The corn was sweet and the thyme and bell pepper tasted GREAT together!

    This dish was good however you have to make sure you get all the fuzz off the corn or it will be very stringy

    I've made this recipe several times. We LOVE, LOVE, LOVE it! If fresh corn is not available, frozen will work too, but of course, fresh is better. Such an improvement over canned creamed corn; no comparison at all. Thanks Rachael for this delicious recipe!

    I really liked the red pepper and celery with the corn. Definitely better than what you get in a can.
    The bell pepper with the corn is the best twist on a classic favorite!

    I was NOT a fan of creamed corn, until now. This was so fresh tasting, definitely better than the mush you get in a can! I made it for a family birthday party and all 3 generations RAVED about it.
    really looked and sounded good on TV when RR was preparing. It wasn't bad it was pretty bland and I felt it really wasn't worth the effort.
    Loved the flavors! Hated canned cream corn and this is a great twist even though it doesn't get thick which may be good. Did not use the full 2 tblspn of fresh thyme may even have been shy of 1 tblspn and it was plenty. Will definitely make again. The whole combo meal: Pork Chops, apple sauce & corn was great meal. Everyone enjoyed.
