I followed the advice of others and reduced the lemon juice and left out the cheese. After making this a couple of times, I kept feeling like something was missing. Finally I realized it was missing some minced garlic! We like things with lots of garlic so I used two cloves. That was the missing piece...now it's a staple we use weekly in our salads.

Thank you Rachael!! I made this like it stated and it was fabulous! I do love lemon and the tangy flavor it has - will make this more in the summer as it tasted very light to me with the stronger citrus twist. I read several reviews that said it was too thick with the cheese, but to me I haven't met a thick dressing that was too thick. It made it feel decadent, like I was having something really fattening, although I used the light mayo and a little less EVOO. Thank you so much for this great dressing!!

Should have read Broach126 before I made my salad. Absolutley right the best way is to add the cheese to the salad not mixed in dressing. The dressing is tasty but too thick with the cheese added. Do not even think about skipping the salt, this dressing NEEDS it. Now with that out of the way...enjoy this on just Romain or any green salad. Yum! And yes, low cal mayo works fine.

This was great. I'm not a fan of either raw egg or anchovies. I found this as a search for "romaine lettuce dressing". I did read some reviews and noticed a lot of "too much lemon", so I used only 1/2 lemon zest and juice. It was perfect. I used the Kraft reduced fat Mayo w/olive oil, 1/2 lemon & zest, tsb pepper, the olive oil & pinch of salt. Also, I didn't put the cheese in the dressing. I lightly dressed the romaine (left the extra dressing for adding more if anyone wanted, and added the cheese to the salad on top. I prefer this to traditional ceasar dressing & will make this a lot. I'll call it "Rachael's romaine salad". This was gone - I heard a bunch of "mmmmmmmmmms". Keeper.

I really enjoy this recipe! It's easy and fast to make and actually tastes homemade. I don't know about you, but I can spot a bottled dressing a mile away! I've even made this with light mayo and it's still good.

Yum! Had only a couple spoonfuls of mayonnaise left in the jar, and half a lemon languishing in the fridge, so I decided to give this a whirl. I thought the taste was really lovely - not overly lemony for me at all. This one is a keeper.

Delicious! Tasted similar to a cesar dressing. I put it over a spinach and romaine salad, with chicken strips, and mushrooms. Me and my husband loved it and will make it again.

Made this dressing as per the instructions, and it was extremely poor will not make it again the Pamigiano-Reggiano cheese was a very poor selection maybe regular Pamesan would have been a better choice. thumbs down on thsi one!!!!
