One of my go-to desserts. So easy and so light after a heavy meal. I always put a bit of Creme de Menthe in the bottom of the parfait glass, then the vanilla ice cream. Then continue layering, finishing with Creme de Menthe. I top with a dollop of real whipped cream and garnish with a mint leaf, if I have them, or a raspberry. Serve in a tall parfait dish with long handled spoons.
