Creme de Menthe liqueur, for drizzling
Softened French vanilla ice cream, 1 pint per 4 servings
Suggested garnish: fresh mint leaves, raspberries

Directions

In parfait cups or cocktail glasses, layer creme de menthe with French vanilla ice cream. Garnish parfaits with raspberries and fresh mint leaves.

One of my go-to desserts. So easy and so light after a heavy meal. I always put a bit of Creme de Menthe in the bottom of the parfait glass, then the vanilla ice cream. Then continue layering, finishing with Creme de Menthe. I top with a dollop of real whipped cream and garnish with a mint leaf, if I have them, or a raspberry. Serve in a tall parfait dish with long handled spoons.
