This recipe was fantastic in all categories! There was nothing I would change at all. I didn't make the rice (ended up making rice-a-roni instead, but the cutlets were incredible. Absolutely do not skip out on the basil-parsley sauce, that is what kicks up the flavor x100. This will definitely become a staple.

EXCELLENT. Just loved the aroma of the bread crumbs with the lemon and other ingredients as they cooked. Didn't have pine nuts. Fantastic flavor. I am making it again tonight and this time I am making the Risi e Bisi too.

I made this last night for my boyfriend and my dad...they both couldn't stop telling me how much they loved it! It really wasn't too hard to prepare...although it does take longer than 30 minutes for sure. There are a lot of little jobs that make preparation time consuming. But once everything is together it cooks quickly! Made the risotto with it as a side, and some steamed spinach. Great weeknight dinner!

really great flavors and the crispyness of the chicken was great i substituted the pine nuts for walnuts and it tasted great the sauce adds a great touch took only 30 min super simple and easy

This took a wee bit longer than 33 minutes to make - more like an hour - but it was super tasty. I had a hard time getting the sauce to actually process in my food processor because it was too little volume to reach the blades. We made the chicken and the risotto, and both were wonderful. The lemon, parsley and basil combination worked really well to give the dish a nice flavor without being overwhelming.

This was SO good. I did it without the pine nuts. What I loved was the way the coating with the red pepper flakes delivered heat that was immediately was complemented by the lemon and basil in the sauce. The tomato added a great taste treat as well. I served this with fresh broccoli and herbed potatoes.
A definite keeper. I can also see how this would work with a mild white fish, since I am trying to do more fish in my diet.

I made the chicken with a pine nut couscous for a quick side dish. The chicken was excellent. I had one pack of breasts (3 and I could have made half of the breading; I'll do that next time so my pine nuts will stretch over 2 meals instead of just one. The basil sauce was excellent and added a perfect amount of fresh, citrus flavor to the chicken. Both my kids ages 10 and 8 RAVED about this. I'm sure I will hear a request for this within the next couple of weeks and I can't wait to eat it again.

Chicken dinner was awesome even without the pinenuts. (I usually dont have pine nuts at home. Basil and Parsley sauce a must. It was great dipping chicken into sauce with a piece of tomato. This one went into my recipe box...
