    there have been few of R/R's recipes that I've enjoyed so far....but this one is RIGHT ON THE MONEY!! I used chicken breasts, pounded them thin and then cut them in half. I cooked on medium low heat otherwise the breading would have cooked faster than the chicken. At the tail end of cooking and then right before serving, I squeezed fresh lemon juice over them. We are watching our carbs so I served with a nice green salad. My husband and I enjoyed this very much - thanks Rachel. And yes, it took me much longer than 30 min! I'm sure it's b/c she has everything right there ready for her like pots, pans...and a GREAT knife that is ALWAYS sharp!!!!

    I made the cutlets as the recipe stated, but instead of the sauce, used homemade pesto and slices of tomato on a sandwich. It was really good, but the breading wasn't any better than other more simple breadcrumb mixtures that I've used. Not worth the expense on the pinenuts - that flavor didn't come through for me.

    We enjoyed this meal on Friday, it wasn't too hard to make and it tasted wonderfully. I only made 1 pound of cutlets which was enough for 2 ppl. Otherwise I left the recipe as is because I didn't want to run out of breading or sauce. The sauce was great too!

    my husband couldn't stop talking about the crust and the sauce. The kids were iffy on the sauce, but liked the rest of it. It was pretty easy, I had extra crust left over and next time I might make more sauce.

    Very yummy. The lemon and parsley make the dish taste very vibrant and the peas and rice was perfect with it.

    The basil-parsley sauce highlights the cutlets. This is an absolutely delicious dish! An excellent way to enjoy chicken cutlets, not to mention nutritious too!
