    I made these last night. Made them up to the fry a couple of hours ahead and then fryed right before service. They were tasty! Do not flip before they are ready and they will stay together for you! Enjoy...Vikki

    I TAPED THE SHOW AND ON IT AS SHARON AND PAULA PREVIOUSLY MENTIONED, RACHEL STRESSES THAT THE POTATOES MUST BE DRYED OUT VERY WELL.

    ALSO SHE ADDED 2 - 3 OUNCES OF CREAM CHEESE AND NOT 3 - 4 OUNCES FOR THOSE OF YOU WHO ADDED 4 OUNCES.

    I JUST WANTED TO PROVIDE FYI. HOPE IT HELPS. TURNED OUT GREAT!

    I use left over mashed potatoes instead of boiling potatoes when I'm ready to make these delicious cakes. If they don't seem to hold together well you can always roll them in a little flour or bread crumbs. Adding a little flour to the mixture also helps to dry them out a little (just don't use too much, they don't hold together well enough if you get them too dry. These are my favorite potatoes for breakfast, lunch or dinner. Adding the sour cream is new for me but they are so delicious with it added in. Will make them this way from now on. Thanks Rach, you are an artist when it comes to cooking and recipes.

    OK, I read the other reviews before making these, so I was forwarned about possible wetness. I made sure my potatoes were dry before adding the ingredients and mashing them. I also used what I had on hand, which was most of a container of whipped cream cheese, which I did not heat up. I also used 2lbs of large yukon golds instead of idaho potatoes. I did not add the sour cream. But other than that, I used all the other ingredients including the egg. They came out fine. I did drop the first cake on the floor when tranferring them from the pan, my dog loved it. But the rest came out fine. I had four large cakes....yummo!

    I was looking forward to making what seemed like an easy recipe for potato cakes...they were wet and wouldn't turn in the pan. We ended up throwing them away and just adding some cheddar cheese to the rest of the mixture and baking it as a twice baked potato casserole. (which is why I gave this recipe a two star---the taste wasn't too bad!.

    Followed the recipe to the "t" and my mixture was very wet. It did not hold together and came apart when I tried to flip it. I saw the show where Rachel made the recipe and her mixture did not look as wet. I am not sure where the disconnect is. Better to stop at the mashed potatoe stage (no egg and enjoy the flavors without the extra step/clean up of frying the cakes.bg
