I made this for a potluck and everyone loved it, I did however add diced chicken to make it a meal. It was very easy to double even triple the amount of everything. Great recipe.

My husband and I really enjoyed this salad. It made a great summertime meal. I added some grilled chicken to it as well as cucumber and a handfull of broccoli cole slaw mix I had. The dressing was something a little different than we're used to. Overall, a perfect, light summer meal that doesn't heat up the house!

I made this for dinner tonight, along with the Tuna burgers. Just wonderful. I wasn't able to find wider fried noodles, so had to use chow mein noodles. The dressing was slightly sweet and slighty salty. The only addition I made was some grated English cucumber.
