    This was easy and excellent! I sliced rather than chopped the raw vegetables, and I used sliced Israeli pickles instead of the relish, as relish is both too high in carbohydrates for us and bad-tasting to me. I omitted the black pepper, as I used hot giardiniera and felt that that was piquant enough. What a tasty, healthy dish!

    This is really yummy. Crunchy, sweet and spicy. Haven't tried it yet, but think chopped a little smaller, would make a really good topping on hoagies (subs.

    I sliced all my cucumbers, laying them down in layers in a bowl, and salting each layer lightly. Then I put two plates on top and covered the whole thing with plastic wrap. I left them in the refrigerator overnight. In the morning I poured off at least a cup of water! The cucumbers were still quite crisp and fresh ? not rubbery at all. The dressing stayed flavorful, not watery and soggy.

    I added olives, pimentos and fresh chopped parsley for more color. I also put some of the liquid from the marinated artichokes in for more flavor.

    Thanks once again Rachael for a delicious recipe. I enjoyed this by myself as a light meal. Will be sharing it with a co-worker next time I make it (soon because she is trying to eat healthier too. My husband the meat eater enjoyed this with steak cooked on the grill.
