loved it!..excellent texture, easy to use and was delicious!..I cook and bake a lot so this large amount of icing was not a big deal for me, it can be halved easily and be the perfect amount fo 24 -30 cupcakes..

A pound is 16 ounces, a cup is 8 ounces.
So, 2 cups would make 1 pound.

i just made this icing for some vanilla cupcakes and it tasted delicious! even my picky little brother was oohing and awing over this icing! i was looking for something a little thicker for the cupcakes but i'm still very glad i used this recipe! i also cut it in half and i'm glad i did, for i ended up with the perfect amount of icing for 30 cupcakes!

This is probably the best icing recipe I have made and tasted and this is a review from someone who would take savory over sweet any day. Most icings are are too sweet or the texture isn't terrific but this was perfect. My family really enjoyed this on their cupcakes and cake! Based on feedback from other reviews, I did half this recipe and still had enough to ice 24 cupcakes and a small cake. Thanks Rachel for another easy and terrific recipe!

I made this frosting for my mom on her birthday, it made a lot of frosting, I divded it before I put the food coloring and I made 6 differnt colors, my mom loved it, she couldn't beleieve I made it all by myself, ever since I was a kid I wanted to be a chef since I was a little kid, I hope to still be one today. and this recipe actually made it to my recipe book!

I love this icing! I usually don't like icing because it is too sweet but this stuff was great! Unless you have a LOT to ice I recommend halving this recipe. I did and I was able to ice 2 dozen cupcakes and a 1 later cake and still had some left over. Great job Rach!

This is one of the most flavorful and easy to make icings I have ever made. Highly recommend. I am surprised, since Rachel does not consider herself a baker, that she has such a fabulous recipe.

This makes an enormous amount of icing. For cupcakes cut at least in half.
