I loved loaded potatos and this receipe sounded quick, easy and flavorful. They are great for a snack and probably a great side dish to a meal. I received compliments from friends and would probably make them again. Good portion size.

Absolutely loved these! I've made more complicated, time consuming stuffed potatoes before but these were the best.
So quick and easy. One hint Rachel mentioned helped, when smashing think fluffy, chunky not gummy.

I enjoyed this side dish however you definately could have made this a meal. My only complaint was that it was too dry so I added some more sour cream to mine. That helped. I think if it had some Romano cheese or something to give it a little added kick it would have been better. I might make this again but try a different approach to it.
