    While the fast and easy preparation of this dish is definitely a plus, I found it to be far too bland (even with generous spicing. We cook Indian food fairly often at our house, so I was a little suspicious when I saw the ingredient list and preparation time. Unfortunately, I did not find that this dish had the depth and complexity that we are used to. Our favorite eggplant version takes a little bit longer and uses many more spices, but I think it is well worth the very minor extra effort. As a quick eggplant-based meal, this is ok, but it didn't give me the Indian fix I was hoping for. With just a few more ingredients and a little time, you can have a much more satisfying and complex dish.

    So easy to make and so yummy! In order to add more protein, calcium, etc and make it a more nutritionally complete meal, I added tofu triangles that I panfried in a small amount of veg oil with a dash of sesame seed oil. The slightly nutty taste of the tofu and the eggplant go well together. Garnish with the scallions - Big FAT YUM!! FYI - This recipe appears in Rachael's 2000 book "Veggie Meals".

    This turned out even better than I expected. Have only made it once, but doing it again tonight for company. I think a key may be good curry paste --- I found "Patak's Mild Curry Paste" with cilantro and lemon in our ethnic section. Maybe that gave it more flavor? Great to pack leftovers for lunch with a salad.

    I couldn't believe how easy this was, considering how great the flavor turned out. The mango chutney made a great substitute for high fat coconut milk that is usually found throughout curries. Loved this dish!!

    My husband and I get take out from our favorite Indian place at least twice a week. This was so easy to make and tasted just like the one from the restaurant. I will be making this at least once a week from now on. I can't wait to try different variations.

    What an easy recipe...great vegetarian dish, even my husband, who is a meat eater loved it. We are fans of Indian Style Restaurants, we decided that this dish is an Indian style Teaser...definately worth the extra effort to find the Mango Chutney!!

    I had never tried eggplant before. This show inspired me to try curry eggplant. I really liked it, I will definitely make this again. The only change I made was I squeezed fresh lime over my rice and stirred in cilantro.

    The spices and flavors in this dish are so scrumptious. What puts the dish over the top are the Jasmine rice and the toasted almonds. (Basmati rice is terrific with this too I've made this several times. YUM YUM!
