    I made swordfish kabobs with tuna recipe substituting orange zest with lemon zest. I broiled them in oven for 10 min and they came out perfect!

    I made the tuna steak portion of this recipe, substituting grapefruit zest and juice for the orange zest. Very tasty - a good, easy weeknight recipe!

    I only made the swordfish kabobs but they were great. The lemon zest gave the fish a bright, clean taste. No fish taste AT ALL! I did "marinate" the fish after I cubed it and put all the ingredients on it. I added the juice of 1 lemon, tossed it all together and chilled it about a half an hour. Will definately make again and again. Great for a BBQ and has a very nice presentation.

    EASY ! Use chicken if you want to, or a heavy fish like Mahi Mahi or Halibut if you don't have fresh swordfish.
