    First, I had my butcher butterfly the meat for me. Second, I marinated the meat. Lastly, I used kitchen twine rather than skewers and I cooked the entire piece of meat on the grill and then sliced the pinwheels after the meat rested. I stuffed my flank with baby spinach, sliced cremini mushrooms, scallions, gorgonzola & parm. It took me more than 30 minutes to cook but the results were worth the wait.

    These flavours are great together; I also made a chicken-breast version with pesto, asiago and sun dried tomatoes.

    The method is flawed; the open sliced sides allow the fillings to seep out during cooking. The chicken pinwheels held together a bit better since the chicken meat is stickier.

    Can be grilled or roasted whole, then sliced, but would lose the grilled effect.

    I love to cook with flank steak and I normally marinate and grill. I tried this recipe for the first time with company coming for dinner and everyone was amazed at how wonderful all the flavors were. The presentation of this recipe is terrific too! This is one recipe I'll use again and again. Thanks Rachel!

    Takes a little practice, but well worth it. Used mozzarella and feta (for budget purposes. One time I added mushrooms. Very good. Going to be making this a lot.

    What a mess to make and keep together! Used feta and asagio cheese though (because we don't like bleu and it was tasty.

    We made these after watching the show. I expected them to be good but they were beyong good...they were better than anything I've had in a restaurant. The combination of gorgonzola & asiago cheeses were rich in flavor. We will definately make these again. Thanks, Rachel!

    This was dissapointing. I made this dish with my friend and I consider us total foodies. We have made tons of recipies together (Just to let you know that we're not amutures We subsittuted feta for gorganzola but did everything else the same. We broiled it instead of grilling. I think it would have been a mess on the grill. It was really hard to roll. Overall it was just not that great. We would have much rather have had the steak with sauteed spinach. It also didn't look as great as we expected.
