I made half the recipe, but the entire sauce. If you make this and you are going to use 16 ounces of pasta double the sauce. The next time I make this I am going to maybe use Italian sausage or pork sausage in place of the chicken and omit the herbs. We enjoyed this.

Yummo!! I kind of winged it with the recipe a bit. I used meatloaf mix (veal, pork, and beef for the meatballs and I used 1% milk for the mac n cheese and fresh spinach instead of frozen. But wow. Really really good. My little one (4 1/2 loves spinach and mac and cheese so he loved this. My husband said it was great too. He said it was the perfect leftover food and he hates leftovers!! I will definitely make again!

I wish I had read the reviews before I fixed this. I doubled the recipe, because we have a large family (8 of us, but I only used enough spinach for the regular recipe. I put 1/2 of the mac and cheese in a casserole, sprinkled some shredded parmesan cheese on top and baked it. I prefered it that way, but my husband and kids loved it the way that it was. The meatballs were AWESOME!!! I used ground turkey and will definitely make those again. All in all, the family enjoyed it, so I will be making it again.

I'm glad I read the reviews before I made this. Definitely double the sauce and only use one box of spinach. If you double the sauce, I wouldn't use 2 cups of pasta water...just enough to thin the sauce down (a cup at most. For those that said the sauce was bland, I sprinkled some garlic powder into it. It's probably fine without that, but a suggestion if you feel like it needs something extra. The meatballs are AMAZING!!! (I left out the fennel, but otherwise followed that part of the recipe exactly. I like this dish because it's creative and looks impressive. I will make this again.
