    Only reason I didn't give 5 stars was because the meatballs needed a little less rosemary and fennel. I am pretty sure I followed the recipe accurately, they were just really strong in flavor. Overall a great recipe and a hit in my house.

    i used vermont chedder and grueyer because that is what i had on hand and i also saw barefoot contessa make her mac and cheese that way. the addition of the spinach makes me not feel guilty eating it! one note, i cut down to one box of spinach as well based on other reviewers and that was enough for me.

    I am a big fan of adding veggies to recipes (even before Jessica Seinfeld made it vogue!but this is really a fabulous recipe and very flavorful. I used whole wheat pasta instead of the regular pasta and added ricotta (skim to the sauce to add a little more creaminess to the sauce. It was terrific and even better leftover !

    This is my new favorite Rachael recipe! So good and so easy! The spinach just makes the dish. And to know that you are eating healthy and having macaroni and cheese at the same time! WOW The chicken meatballs were awesome too! I will fix this time and time again and even my husband who turns his nose up to spinach ate an entire plate full! Even my 5 yr old daughter who does not like to try new things gobbled up her portion! Keep em coming Rach!

    This is a wonderful receipe. I skipped the fennel seed (I didn't have any in my spice cabinet--I substituted mediterrainian spice mix from McCormink seasonings and dried basil. The combination of the Florentine Mac and Cheese and the meatballs is outstanding, the two compliment each other very well. My grandson loved the Mac and Cheese. This will become a standard in my cooking files--Yummo!!

    I made this up for my family tonight and we really enjoyed it! I found it easy to put together and the pasta sauce was just beautiful. I will definitately make this again, maybe with chopped broccoli instead of spinach.

    While watching the show for this recipe I thought it looked good and uncomplicated. Not only was it easy but excellent. This food was exceeded my expectaions!
    This recipe is not only a new favorite of mine but my family as well!

    After watching the show this morning, I ran to the grocery store and bought all the ingredients for this.

    My grocer didn't have ground chicken, so I substituted ground turkey instead.

    It was wonderful! The only thing I will do differently next time is use less spinach. Maybe use one box spinach, and one box broccoli, as she suggests on the show.

    I saw this on Rachel's show today and was absolutely driven to make it. I have a 4 year old daughter, My Husband said what are we going to feed her. I asked her to try it and she loved it. It was really easy to make and we sat down and had a nice family dinner today. That was awesome. Thank you
