We love all of her mac and cheese recipes, this one being my favorite. It looked just as it did on her show, and tasted so good!

This recipe is not a favorite. The mac and cheese was super bland-not much flavor and way too much spinach. The meatballs were alright-but definately would not make again.

I thought my kids would eat the noodles, if nothing else. My daughter, who likes vegetables, asked if she could "wash the flavor off" the noodles. My son, who doesn't eat vegetables, gagged on the noodles and said they taste like "low tide." I realize spinach is an acquired taste, but the dish was presented as a great way to get kids to eat spinach and it really is not. Even after adding an entire bag of shredded cheese, they wouldn't touch it. A waste of expensive whole grain noodles.

We loved both the meatballs and the Florentine mac and cheese. I used turkey for the meatballs, and they were FABULOUS. Seasoned perfectly, delicious, and unusual. On a different night I made the mac and cheese. I only used one box of spinach because that's what I had, but it was great. I had no problems with it being too runny (in fact, I NEEDED all the reserved pasta water, and it had a great flavor. I did add a little onion powder and some cayenne pepper to the sauce because I thought a little kick would be nice. Maybe some people who thought the sauce was bland were using a lower-quality cheese; the stuff in the can that we all shook on spaghetti as kids just isn't the same as good parmesan. Great job, Rachel!

I was pleasantly surprised by the Chicken Sausage Meatballs - the only thing I did different was I added grated onion to the mixture which made them very moist. The fennel seeds really gave them that sausage flavor, but without the fat!
The mac and cheese, on the other hand, was so so. Definitely only use one box of spinach -- just tasted very bland. I'll stick to other mac and cheese recipes and add in the veggie (spinach, broccoli, cauliflower, etc.

I wasn't crazy about the mac and cheese. We love spinach at our house, but the dish just seemed bland. However, these meatballs were out of this world. I did use ground turkey because I had it on hand. They are so full of flavor. We've even had other families ask for the recipe after their kids had them and raved!

My husband loved this recipe. He is a little picky and tonight he came back for seconds! I also took some of the meatballs to work and everyone that tasted them wanted the recipe. I used Italian seasoned bread crumbs which worked very well. The only thing I should have left out of the meatballs was the salt. I will definitely make this "mac & cheese" again.
