    This dish is just wonderful. What a great cheese! Purchased the cheese at Wegmens. The only thing we added was some garlic. Will make this again. Can also freeze it after it's cooked which is a great meal to have when you don't feel like cooking. I would also try it with the bacon wrapped around it but this cheese is a must.

    I made this last night & we loved it! I had to use plain old parmesan, though. I used all of the stuffing in 3 big breasts. The prosciutto was crisp & the chicken stayed moist. Great recipe! I will make these again! Thanks Rachael!

    This stuff is great! I really liked it. I had to substitute all of the cheeses for just Parmesan, and I couldn't for the life of me find pine nuts... but even after all that it still turned out really good.

    I made this dish for a few friends of mine and they really enjoyed it.

    This recipe was so easy to make and turned out to be so delicious and full of wonderful flavor! The filling was so good, even though I used low fat ricotta cheese and freshly grated parmesan. I baked it for about 28 minutes and we'll be making this again!

    This was good but not great. I followed the recipe exactly and I thought it came out a little bland too. Next time I'll use Romano (Loccatelli cheese, which has a lot more flavor than Parmesan. And I would baste the chicken in butter instead of oil. I didn't split the breasts, I used thin cut cutlets pounded out and just rolled them and wrapped them with the prosciutto. Good base recipe, but it needs something more.

    For one dinner, this is yummy but way too much cheese--rather unhealthy. Hopefully your guests don't bring a cheesecake.
    You can find parmesan reggiano cheese at any GOOD supermarket with a cheese department. Wegmans near me in PA wraps "chunks" of cheese and leaves them out on the counter. Try to find a piece with as little rind/skin as possible. To preserve the cheese, I buy the smallest piece I can find and wrap it in a paper towel and place in the frig in a plastic bag squeezed very tight to get the air out. This cheese is very expensive. Good luck.

    I made this twice. The first time the breast halves were too large and the ham didn't quite cover the chicken. It came out a little dry. The second time I used smaller breasts and cut them in half. I then put the filling in the center and rolled them (jelly roll style They were wonderful. I took one and sliced it so it looked like a pin wheel. That would make a wonderful hot appetizer.

    After I saw the show I copied the ingredients and made the dish along with the pasta with gorgenzola. I love to cook and florentine works well with me. I did eye all the ingredients too taste, but we enjoyed it throughly. I thought the gorenzola cheese sauce would be too much for the kids but it was outstanding. Can't wait to get more ideas......

    BTW ... Pecco-Romano you can buy already graded. My opinion is to get it whole and grate it fresh it makes a huge difference. You can find it where you find fresh motz. speciality cheeses and meats near the deli usually, hope this helps...

    This was very good and easy. I made only two breasts....one for now, one for lunch later. I used goat cheese instead of ricotta because it was in my frig. The rest of the ingredients are in my pantry all the time. The chicken was very moist and the filling was very good. I used more than one slice of prociutto as mine was very thin and I wanted the stuffing to stay. This will be a go to for me because I always have the ingredients on hand. The cryovac prociutto is great to keep on hand as it has a long shelf life. Thanks for another winner!!!!
