While this recipe is easy to make, both my husband and I disliked it for different reasons. I disliked the chicken; he thought bacon might make improve it.

Costco sells a couple great ones. I cut it in thirds and wrap and freeze. it's a staple in my kitchen and I grind in mini or grate it several ways to store in frig.

I buy Parmigiano-Reggiano at Whole Foods Market. They have it in chunks, shredded, or grated. I have also bought it at Wal-Mart or any grocery store in a pie-shaped wedge or in plastic containers shredded or grated. A substitute would just be the Parmisean Cheese, but it isn't the real stuff. There is a difference.

You can find both the bagged version and the finely grated version in the section of the store where the cold chesses are. I live in a very small town and we even have it at our grocery store, so I'm sure you'll be able to find it. If not, what I've done before is use just the Parm-Reg chesse that comes in the green can for pasta, lasagna or speghetti. Hope this helps!!!
BTW- I'm making this great meal tonight for supper. It looks SO good!

Can someone Please tell me where I can find Parmigiano-Reggiano alot of the recipes here call for this and I have looked everywhere.
