I eat salads all the time! I am always looking for ways to incorporate nuts (protein into my salads, this thick and chunky dressing was Da Bomb! Truly unique.

I set this salad on my table after making it, and my cat, Snuggles, hopped up on the table and took a crap on it. I guess it really does look like kitty litter.

This dressing was way too thick. I added more vinegar, oil and water to try to thin it out but that didn't work. I also couldn't make it past the smell or appearance to even taste the dressing. My kids had a few comparisons for the looks that were not positive and I had to cover my nose with a hankerchief to even finish making it. One positive... my husband thought it was pretty good. I sent the rest with him to work to get the odor out of my house! I would only make this again if I was forced.

I made this salad for company on Saturday night, and NO ONE could eat it! It was like gloppy sand- and the mix of flavors was beyond weird. We all just laughed it off- but how emarrassing!!! I think I'll stick with Alton or Emeril. They seem to know what they're doing!

I tried making the dressing but following the recipe, it was like paste (I had used the 2 T. of h2o. So I added more water, and then more water and then more water - and then more vinegar and then more oil. And it was still super thick (like sour cream - not exactly something you want on your salad! Plus, it has an unusual texture - it was sandy.
I'm one of Rachel's faithfuls - and I've never, ever had a recipe of hers that didn't turn out (even if it wasn't my favorite, her stuff usually works - not this one.
