These were GREAT! Very easy to make, and very, very tasty! Made them to go along with the Gorgonzola filled meatballs and Tomato gravy from the same episode. I will make these again, and again, and again... I am also going to try them with roasted garlic. Yum.

Instead of the spinich, I used 1/2 of a 1 pound bag of Brussels sprouts, thawed and chopped as my husband thinks spinich is kriptonite! Wow...what a great side for the gorgonzola stuffed meatballs. Rachel is a genuis!

I added another clove or 2 of garlic as that's just how I roll and only one box of spinach per other reviewers and glad I listened. I couldn't imagine the potatoes with more spinach so the 1 box was absolutely perfect! I will definitely be making this recipe again. YUMMMMMMM-O!!!!!

A very nice side! I followed other reviewers advice and used half the amount of spinach and was happy with how it turned out! Will make again!

This is such a simple & amazing side dish! I cooked the whole meal that was featured on this episode (gorgonzola stuffed meatballs for a small dinner party & impressed everyone. These potatos are very simple so it's easy to add too much of something. Too much garlic will overpower the potatos & spinich so taste as u mix:

I added only 1 box of spinach and more garlic, about 6 cloves. Wonderful way to get a serving of spinach in and so delicious! Will definitely make this one again :

I never would have thought to add spinach to mashed potatoes, but since my husband and I love both I decided to give it a try. I used two boxes of spinach and garlic powder instead of garlic cloves since I didn't have any on hand. I used half and half instead of cream to cut down on the calories a bit, and I found I needed to add a bit more than necessary to get the consistency I wanted. It went great with the gorgonzola meatballs and I love that one serving is pretty much like having a whole serving of spinach, too. Great way to get in those veggies!

I love this side dish. I usually just make mashed potatoes plain with melted butter, salt and pepper. Adding the spinach was very creative and healthy. I liked this recipe so much I made it for a Saint Patrick's Day Pot luck at my office. Huge compliments!!! They never thought that adding spinach to mashed potatoes. Everyone is hooked and my co-workers are already talking about making this for their upcoming Easter gatherings. Thanks Rachael!!
