I never tried guacamole until I made this for a party! I can't believe what I've been missing all these years! It was easy, fast and delicious. Kudos to you, Rachael!

This dip is the first to disappear off the party buffet. It's the zing of the garlic, the crunch of that little bit of red onion, and the bite from the jalapeno that keeps them dippin'. I've lost track of the number of times I've made this. I use the juice of half of a lemon and really squeeze out the tomato seeds/juice to keep this from thinning. Did I say that I've started to double the recipe?...it goes just that fast! Thanks Rachael.
