    I made these this morning to have on Christmas Eve morning with my family. They smelled so good that I had to try one. They are wonderful, I ended up eating 3! I can't wait to share them tomorrow morning. They are easy to make and taste fantastic! I will make these every year from now on. Thanks Rachel Ray for the recipe. Merry Christmas!

    I made these spur of the moment when I had a craving for waffles but had no waffle mix. Since I was out of milk too, I substituted it for canned evaporated milk. They were extremely easy to make and I ended up freezing all of the remaining waffles that I couldn't eat. (They were as good as the first day I made them when I pulled them out of the freezer and popped them in the toaster.

    Great taste, and the ginger was not overpowering. This one is a keeper for me!

    BELEVE IT OR NOT, I NEVER EVEN TRYED THIS RECIPE! I SAW ON RACHEL RAY`S 30 MIN. MEALS COOKING SHOWS. SHE WAS COOKING THIS WHOLE CHRISTMAS EVE BRUNCH MENU, WITH HOT CHOCO, SYRUP, SAUSAGE CAKES AN THESES AMAZING LOOKING GINGERBREAD WAFFLES. THESES LOOK DELICIOUS! I WANT TO TRY THESE SO BAD!

    IT IS DISAPPOINTING TO SEE SO MUCH HIGH RATING REMARKS AND YET WE TRIED IT THIS MORNING AND IT DIDN'T SEEM LIKE ANYTHING THAT SPECIAL.

    I was drawn to this particular recipe because it includes pumpkin, which I adore, but I didn't want waffles. I wanted cake. So I used the recipe as written, except I substituted whole wheat flour for white, and just dumped it all in a cake pan. It's perfect! Lightly sweet, moist and dense, with a gingery bite. I recommend it to those who like gingerbread that doesn't have too intense a molasses flavor.

    We really enjoyed these! I used some of the extra pumpkin and mixed it with real maple syrup, added a little cinnamon and heated it up in a saucepan. It was the perfect topping and a great way to use up some of your extra pumpkin puree. I also used half whole wheat flour and half regular. Great, tasty, healthy, waffles!

    I found this recipe by chance and saw that it called for molasses and had some to use up. I made them for my granddaughter and she loves them, she didn't even put syrup on them. The only change I made was used 1/2 cup of unsweetened applesauce for the 1/2 cup butter and they were perfect. I froze the leftovers, so we can enjoy them another day.
