    I made these for my family today and everybody thought they were just ok. I didn't change the recipe at all and they were a little bit bland. I thought they needed to be a bit more sweet and they didn't have as strong of a gingerbread flavor as I would have liked. The recipe does make a bunch, but if you don't make one a half times the recipe, you end up having leftover pumpkin.

    I love waffles, I also love pumpkin and gingerbread so this recipe was perfect for me! I cut the recipe in half for me, my husband, and my son and it was the perfect amount! It made 4 large waffles (my husband ate two and me and my son at one each. They were so fluffy and yummy! My husband ate his with a powdered sugar on top. I had mine with powdered sugar and a little light cool whip, and my son had his with syrup. We all enjoyed them! I will be making these again!

    Made these waffles today. Our house filled with 4 nineteen yr olds and 2 'oldsters' (my hubby and I . These were loved by all of us. Great flavor and filling. One recipe fed all of us. Tasted just like gingerbread. Thanks, Rachel!

    I cut the recipe in half, and we still couldn't finish them all. They are very thick and filling but worth every bite. Now we will have these wonderful waffles for breakfast all week! Great for the holiday season!

    This waffle recipe has been a Christmas tradition in our family now for 4 years. We absolutely love them and literally eat them once a year. They are filling, but SO delicious. They practically don't need syrup, they are that rich and sweet. But a little dusting of powdered sugar does the trick.

    I made these Christmas Eve Morning for my family. My Dad is 86 yrs old and he said, "these look different..." I said, they are Daddy. They are gingerbread waffles. He ate them with a smile on his face. My youngest son was so amazed at how good there are/were. These are very yummy and I will be sending this recipe to my son in Tennessee. His wife hates to cook and thank God I taught him how to get in the kitchen and enjoy what he makes. I know this recipe will be a big hit there! Thanks Rachel for this lovely recipe!

    Simply spectacular!! The house still smells great hours after. I topped w/ wiped cream as many others have and I believe that's the way to go. They are indeed quite heavy and the recipe yields a lot, i cant wait to freeze then an have breakfash for the week days. Thanks Rachael

    These are basically pumpkin-infused gingerbread pancakes! They are fantastic and very easy to make. I even leave out the butter entirely, making them low-fat but still moist. Great stuff!

    Though this recipe is slightly more complicated than regular waffles, it's definitely worth it. This makes thick, fluffy, filling waffles. They're really yummy and good for you too! (pumpkin is a superfood! We had them with REAL syrup and fresh whipped cream and they were delicious.
