Greek Salad

Ingredients
  • 3 vine ripe tomatoes, cut into chunks
  • 1 red onion, thinly sliced
  • 1/2 European seedless cucumber, cut into bite-size chunks
  • 1 small red bell pepper, seeded and chunked
  • 1 small green bell pepper, seeded and chunked
  • 1 cubanelle pepper, seeded and chunked
  • 1 cup Kalamata black olives
  • Several sprigs fresh flat-leaf parsley, about 1/2 cup
  • 2 (1/4 pound) slices imported Greek feta
  • 1/4 cup (a couple of glugs) extra-virgin olive oil
  • 3 tablespoons (3 splashes) red wine vinegar
  • 1 teaspoon dried oregano, crushed in palm of your hand
  • Coarse salt and black pepper
  • Pita breads

Combine vegetables, olives, and parsley in a large bowl. Rest sliced feta on the top of salad. Combine oil, vinegar, and oregano in a small plastic container with a lid. Shake vigorously to combine oil and vinegar and pour over salad and cheese. Season with salt and pepper and let the salad marinate until ready to serve. Serve salad with pita bread blistered and warmed on a hot griddle or grill pan.

This is a very quick and easy recipe that is delish! I added an extra tsp of Red Wine Vin. along with a couple of extra dashes of oregeno and it added a tang- which I like. I was looking for a greek salad with a bit more flavor, and this is it! Out of all the Greek Salad recipes I've tried, Rachel's is the best. The proportions of tomato, cucumber, bell peppers, olives and onion are perfect. It's important to use a good Greek feta (the ones that come pre-crumbled turn out to be too soggy). I have made Greek Salad before but never added Red wine vinegar. That surely gives it a punch. This was super easy to make and was loved by me and my husband. It is also super healthy as it has so many vegetables. I also added some baby spinach that was lying around, which totally worked. RR's Greek Salad was delish!!!!! I used RR's Greek Salad & Sara's Chicken with Tomato and Feta Cheese Sauce & all the accompaniments (See her menu), & it was delish!!! - (Plus, I added Sara's Tabouleh) to this menu - and my guests went wild! I didn't put Feta in the salad because of the Feta in the Cx Sauce, but I did set some on the side. And, it was used up on both the salad & Cx.
