This is a fantastic dish even for guests who don't like vegetables. The spinach was great. I used ramekins vs. a muffin tin although you can still remove and place on a plate.

GOOD! I replaced some stuff though to make it a little healthier/I didn't have some of the ingredients. I replaced shallots with onions, heavy cream with 1% milk, ham with turkey bacon, no nutmeg. Still so delicious!

This recipe was surprisingly delicious. I was a bit skeptical with the ingredients and method at first, but eggs and spinach go excellent together! I made this with Sara Moulton's Perfect Hashbrowns which was the perfect complement. This was such a satisfying breakfast and will make it again and again.

This recipe got rave reviews from everyone at Father's Day brunch; I too used vanilla soy milk & flour & an extra 20 minutes in the oven produced perfect yolks; easy to make, easy cleanup; a definite keeper!

Based on my budget for the day I substituted Black Forest ham for the Prosciutto. These are so adorable when they come out of the form. I added finely chopped baby portabella mushrooms to the spinach mix for substance. Two eggs per cup make these very hearty, next time I'll try just one. Everyone gasped when I brought these to the table. This one is a keeper!!

I thought that it was an awesome idea, the mess it kept small and there perfect. I served them with a side of fresh fruit and did 2 per person, they were a hit!

These were very good. I followed the recipe exactly except that I just used about a good heaping teaspoon of the spinach mixture (I used fresh spinach. I also used a good splash of half and half instead of the cream. They looked as good as they tasted and were impressive and fun.

Eggs go very well with all type of hams but my favorite is the Spanish one called jamon iberico de bellota or pata negra. Jamon Serrano is of lower quality but also good for some dishes.
I recommend the ham from Buyjamon.com
