    I made this for brunch this morning with a few additions. I added garlic to the onions and a bit of mild cheddar cheese to the spinach, cooked it for 20 mins, turning the cupcake pans to ensure even cooking, Oh My! These were so good and so easy to make, not to mention I was able to get all of the kids to eat spinach. Thanks.

    I made these because I saw Rachael make them a while back on her show, and I couldn't wait to tell my children that we were making green eggs and ham. I loved the expressions on their faces when I told them. Then we discovered as we ate these that they are quite tasty too! Wow! You have to love fun, healthy food.

    this was so easy to make and impressive. had with salad for a great evening meal. Endless possibilities to chop and change the ingredients, for example, i would add mushrooms nextime and serve with baked beans for a yummy sunday brunch.

    Very good, especially if you follow a low carb diet. I added 5 minutes on to the cooking time as i thought it was too runny with only the 15 minutes.

    I made this for a meal for my children since I had so much ham left over from the holidays. All of my boys thought it looked neat but wasn't too sure they wanted to eat it since the name was 'Green Eggs and Ham'. Once my oldest son took a bite, he couldn't slow down fast enough to enjoy them. He scarfed three down in a matter of minutes and his brothers were desperately trying to keep up with him so that he didn't eat them all. This is just an easy, fast and fun recipe to make and my family truly loved it. My husband is very hard to please and usually doesn't like the really 'simple' tasting recipes. He likes his food a little more complicated but he really enjoyed eating these too. Thanks Rachel for a recipe that gave me a break in the kitchen for at least one night.

    Oh Man, I just had these today at my sisters house for brunch....they were amazing!!! I am so ready to check my fridge so I can copy it right damn now, make it my own! Cheese on top is ok, but,,,,,,what do you think about a bigger muffin tin, then the first layer is eng. muffin 1/2 or 1/4 (with maybe a tad of butter then proscuitto (ham, bacon, sausg then layer normal and top this bad boy with hollandaise or instead of a breakfast meet maybe crab meat with bernaise???

    Any way, incredible dish, super easy, and very elegant!!!

    These were the best and easiest Christmas morning breakfast ever! I used a little shredded parmesan and baked until the yolks were hard. My 3 year old grandson ate 2! And it's usually a fight to get him to eat! Thank you Rachael for such a wonderful and easy meal!
