    I cannot even begin to say how much I love this recipe! It was so quick and easy I was honestly surprised at how great it tasted! I used skim milk and sweet onions in my spinach just because that's what I had. As I was filling up the muffin tin with my ham, I decided to make a few out of bacon strips. Delicious!!! I highly recommend this for anyone, I was even able to wash all the dishes before they were done baking!!

    Absolutely wonderful! Instead of heavy cream I used light vanilla soy milk, flour and shreaded parmesan cheese. Baked it for about 20 minutes instead of 15.

    I made these with onions vs shallots and used regular deli ham. They were so cute and tasted great. They would be perfect for a brunch where you wanted to make an impression. They were also very easy to make. Awesome idea!-Thanks Rachel!

    Simple and fun to make.
    A good way to get meat, veggie and egg in kids. I followed the recipe except I just used a little bit of yellow onion for the shallots and honey ham for the ham. With these adjustments it is also a big $$$ saver in these tight times.

    At my work, we each take turns to bring in a breakfast treat on Friday mornings, so when I saw this recipe on tv, I knew it would be perfect for this! It was a hit at my work...I just took the basic recipe idea from Rachael and made it with what I had in the fridge already. I made it with salami slices, sauteed onions, chopped parsely, cracked the egg in each cup, and topped it with pepper and parmesean cheese. I also made this the night before and just heated them in the microwave in the morning to bring them back to room temp. My cowrkers absolutely LOVED them and can't wait to make them for their families. Thanks Rachael for the great recipe idea!

    I had such high hopes for this meal. The egg and spinach part were delicious, but the prosciutto made it way too salty - and I like salt. Maybe a low salt ham would work better.
