I've never put pesto in eggs before, it was delicious! I'm not a big egg eater, but Rachael jazzes up her recipes so that even someone like me eats eggs! Plus, how cute is green eggs and ham?? I do agree that the recipe directions are confusing. Use the same amount of spices listed for the tots and add to about 2 TBS of tomato paste. (I also add a little EVOO and cook in the microwave until warmed. You can play with the ingredients (adding sugar, garlic, etc. to make your own "ketchup". Someone messed up typing out the recipe, but I saw the episode and that's what Rachael did.

I have only tried the tots so far. My teenage daughter loves to cook and had fun with this recipe. It was delicious and ended up with no leftovers!! Thanks

My wife and I made the recipe (except for the bread - I am celiac and cannot eat regular bread and loved it!

But I was confused. I admit I did not read carefully enough until I was in the middle of the recipe. Nevertheless: 1First paragraph says ". Sprinkle the tots with salt and dried seasonings..." So I had already used all of the herbs in the first group of ingredients. Then I discovered the next-to-last paragraph, "In a microwave..., heat the tomato sauce, oregano, crushed red pepper, and the garlic clove from the toast". Wait! I had already used those items - and WHAT tomato sauce? None is listed in the ingredients.

I promise you I did read the recipe and even marked the sequence, but I missed that discrepancy. Oh well, the recipe is great and the tots were good without the dipping sauce, but I would like to try the sauce if anyone can understands it.

Yummy AND healthy! People need to read. Don't like that *splash* of half and half? Don't use it! Sheesh! Is that all that's bothering her?

Love my green eggs and ham! Tasty AND fun!

I made this today for my husband and he raved about how good it was. To the reviewer with the huge rant about it being so fattening: The beauty of RR's recipes is that the fat content can be easily altered without sacrificing flavor because she uses so many herbs and spices to flavor her dishes. For example, one could easily reduce the EVOO in the green sauce to 1 tablespoon or even 2 teaspoons without losing the taste. The amount of EVOO and butter could easily be cut in half for the eggs and ham and you can always use milk instead of half and half. I do it in A LOT of her recipes with great success. The tots can also hold their own without the dipping sauce. Also, please don't rate a recipe which you have not even made. It throws the rating system off balance.

I thought this was a fun idea for dinner and my husband and I really enjoyed it. I used my basil pesto, instead of the spinach, that I had frozen from summer and cooked about 1/4 cup of it with the eggs rather than folding in afterwards. The cheesy toast put the fat count way over my usual meal plan, but it was nice for a change. This would be great for brunch.

I really like Rachael Ray and am usually able to get a recipe here and there from her show, but how is this episode (as she states truly healthy? Because it has spinach in it? These 3 recipes are LOADED with calories and fat...geez, one little piece of cheesy toast has enought cal & fat for ONE WHOLE MEAL!!! And even though EVOO is heart healthy, it is still FAT. And any good the oil will do for you (and only in complete moderation, at that, is negated by the loads of saturated fat in the cheese, eggs, butter, ham, half & half, and who knows how laden those "tots" are. I guess as a once-in-a-while, have-a-brunch-party thing it might be okay...and I'm sure it all tastes amazing (how couldn't it???, but I would NEVER make this for my family. And I'm sure if Rachael gave the nutritional "stats" for these recipes, no one else would either.
