    My husband and I loved it. A really fresh take on Minestrone that we loved. It's comforting but healthy at the same time, and soooo easy to make.

    The recipe states it makes four servings, but it is more like 6 or even 8. But, don't fret, it's even better the second day!

    I have several minestrone recipes that I make and all are delicious. This one is NO exception. I include a Parmesan rind and simmer for a while before adding the pasta. I finish cooking the pasta and let it sit on the stove until dinner. The pasta absorbs the flavors and the soup thickens and wow! Heaven in a bowl. Sometimes the simplest recipes make the most divine soups!

    This soup was in one of her cook books a few years ago and I have made it a few times and it is really satisfying. The little kids don't really appreciate it much, and it doesn't freeze very well (most soups with pasta in it don't...leave the pasta out of the freezer then when you want to reheat it, make some fresh pasta and pour the hot soup over it.. I will make this one over and over.

    I started making this about a year ago; my family loves it, I make it once a month! I also have to add more broth. Have it with a loaf of crusty bread! Excellent comfort food!!!

    This is really good, but next time I will substitute another can of cannellini beans for the garbanzos. I normally love garbanzo beans, but in soups they tend to add a smell and flavor that I can only describe as eau de wet dog.

    I doubled this recipe only to find that I needed 2 soup pots. I wonder if it is an error indicating only 4 servings. Also, I don't think the pancetta added any real flavor and was surprised that it didn't tell you to render it more. The next day proved a delight - but it needed more broth. All in all, a delicious and healhty soup!

    This is a great soup for one of those cold winter days. I made this and my five kids all LOVED it. They were even OK with the spinach. The leftovers are even better. Crusty bread is a must!
