    Soups for me tend to be a great way to get rid of vegatables and meat that I don't want to waste. Luckly for me I had fresh green beans, and a bag of spinach. Looks like alot of people deviated a little from the recipe, so Here are the changes I made. I used elbow macaroni instead of penne. I only had 3 oz of prosciutto so I added some sandwich ham (chopped to make up the diff. I also threw in some fresh broccoli late instead of zucchini (I didn't have any and neede to get rid of the broc.. The broccoli doesn't cook for very long before it falls apart, but it still worked well (it IS a green soup anyway. I'd suggest to anyone to cut and refridgerate your items BEFORE you start. What a fantastic Hearty soup! Works well with toasted garlic bread for dipping!!! Thanks Rachael!!

    This soup is awesome! Perfect for cold winter nights. I have a toddler at my feet as soon as I get home from work, and this meal lets me create a healthy, homemade wonder in just half an hour.

    I love the Minestrone Soup served at Carraba's. I had never had minestrone made with chicken stock until I had it there. I searched for a similar recipe. Well, I made this recipe for the first time today, and I'm hooked. This will become a staple in my house.

    This soup is so easy to make and tastes great...I leave out the onions and the meat and cheese and it still turns out wonderful.

    I absolutely love this soup. The recipe makes a pretty large amount, so you can eat some and freeze some for later (always a bonus with me! The best part are the two beans, and how they compliment all the green veggies. This one is definitely a keeper!

    This soup was absolutely delicious and so, so easy to make. I left out the green beans and added a can of drained white navy beans. I did think it was a little on the salty side--next time I'll use low sodium broth and then salt to taste.

    this was delicious. i loved it. i couldn't find some parmiango-reggiano so i used romano cheese instead, it was still a hit. i served sourdough bread with it, it was great for dipping into the soup. i also used regular bacon instead of panchetta, since my local grocery store didnt have it either. my husband thought it was alright, he was a little disappointed that i didnt add meat to it.. hes a meat guy. but i will defintely make it again here and there. thanks rachel again, for great recipes!

    This was so simple to make. I even subed chicken for the pork and it was still bursting with flavor. I love this recipe!
