    Made a vegetarian version....left out the pancetta (I sacrificed for the greater good!, used 3 cans of vegetable broth and 3 cups of water...and wouldn't change another thing! Sure does make a lot, but I'm looking forward to leftovers! =

    Tried this recipe for the first time tonight. It received a chorus of "yums". It was so good we all took to sopping up the last bit of broth in our bowls with our bread.

    I varied the recipe slightly to fit our vegetarian diet. Eliminated the prosciutto and substituted vegetable broth for chicken broth. I also used 4 cups of water and 4 cups of broth instead of the 8 cups of broth that the recipe calls for and the salt level turned out perfect!

    Very filling soup that will become a permanent part of my repertoire.

    I haven't gotten the "10-mins prep" time down yet, but it was easy to make and tasted very good! I'd never used the Parmigiano-Reggiano cheese or Pancetta before, and I liked both. I served it in a french bread bowl and it was a complete meal! I'm sure there's more than 4 servings here.

    This soup was pretty good the day I made it but even better the next day! It made 6 servings instead of 4 like the book said. Despite that I forgot the garlic (for shame! I still think it turned out good. Should be even better with garlic!

    Also, I omitted the pasta and the pancetta and it still turned out fine.

    Made this for the in laws last night and everyone loved it!

    One of the better Rachael recipes I've tried!

    Quick, easy, and a huge hit!

    (the only suggestion I have is to add more chicken stock- there wasnt enough broth in the soup towards the end

    I made this for my wife and I for dinner tonight, after coming home from Christmas shopping. We both loved it, goes great with a loaf of nice crusty bread and wine.

    Will definetely be making this again soon, (by my wifes' request!!
