This was a good soup, though if you're a slow chopper like me, it may take you longer than the recipe says. I didn't want to use the kind of meat she suggested because of it containing nitrites (preservatives, so I used Applegate Farms brand chicken and turkey sausage in the spinach and feta variety. I chopped up two links and used it as directed in the recipe. I followed the other instructions, though, and it made a really good soup.

Once again Rachael has given me a winner to add to my favorites. This soup is the kind of soup you want on a rainy , cold November day in front of the fire....and it only takes a few minutes to prepare. Delicious and hearty. This is the first time I have used panchetta in a recipe and I am sorry I waited so long.

The recipe is fast, easy and flavorful. I added carrots as well for a little more color --yummy!

This is without a doubt one of the easiest and flavorful soups I have ever made, my entire family begs me to make this regularly, made it for my Mom when she was not feeling well and my entire family said I should make it in huge quantities and sell it!!! One suggestion use a less pasta than the recipe calls for otherwise it ends up way too thick.

I am generally one not to cook. But I tried this recipe out and can't get enough of it. It is easy to make and tastes delicious.

This was excellent. It's so full of flavor and texture that you don't know it's loaded with vitamins! I sauteed the veggies a few minutes longer than suggested, just to make them more tender. I will definitely be making this again.
