I think these would have been better if I had used diced raw potatoes instead of the baked. Otherwise, these were good.

These potatoes are great. I used boiled red potatoes, and just chopped up some onion instead of the green onions. Also, I sprinkled some cheese on top. The whole family was happy. :

I made this along with ham and eggs this morning. Used just a bit of seasoned salt with McCormick Montreal Chicken seasoning. Wonderful flavor and texture. This will become a regular menu item at my house!! Food Network Rocks.
