This recipe is very good, but took me close to 75 minutes to prepare. Don't forget plenty of salt on each layer or it is very bland. Makes an beautiful presentation though. Try it!

I really enjoy Rachel Ray's recipes, but this one was just okay for me. The marinade was great but the tomato sauce was bland. I thought the cubanelle peppers were incredibly mild and lent very little taste to the cacciatore. I added a minced anchovy fillet and 1 t. thyme to kick up the flavor of the cacciatore sauce.

The chicken was quick to make and delicious to eat. I thought it was ingenious to use skinless, boneless dark meat in this recipe. I didn't even know I could buy that until this recipe inspired me to look for it. I know I'll be bring it home quite often from now on. My husband had this to say about the chicken: I was full after I ate the first piece but I ate the next three anyway because I couldn't bear to leave such good food on my plate. Now there's a compliment!

This dish was excellent!! Very flavorful & sonething I would definitely make over & over again!!! For the first time, I always follow a recipe exactly as shown. The only thing I "may" change for future dinners is omit the caccitore all together. This recipe will be delicious with or without the caccitore. I also agree with other reviewers...it took me much longer than 30 min. However, practice makes perfect & once I get the recipe down, I'm sure it can be done in 30 min.

The only reason I rated it a 4 instead of a 5 is because I didn't follow the recipe exactly, but it is good stuff for sure! Yummy!
