    When I saw Rachel make this, I knew it was going to be good; however, not in 30 minutes. I added some celery and carrots with the peppers/onions for a more deep flavor. Also, once the fire-roasted tomatoes went in, I added a splash of Marsala wine and simmered the sauce for 45 minutes until it reduced a bit. Those small additions made this dish over the top!

    i dont kno about the meat or mushrooms...... because i only made the potatoes because im a vegetarion... I LOVED THEM!

    This was good. I mean, come on ppl...for the amount of $$$ you spend on this (cheap!, the amount of time (it IS less than 30 minutes! it is a great meal.

    This chicken was good, I marinated the chicken and grilled it on my george foreman and the grilled the portablella mushrooms on the george foreman and they were wonderful. I did not have ricotta cheese for the potatoes so I used a little neufetcial some cottage cheese and sour cream. potatoes were great as well. The fire roasted tomatoes and onions added a nice touch. I would make this recipe again.

    Delicious and rich- super easy and quick! I made this for a friend visiting from out of town- she loved it so much and was so impressed that she insists I make it everytime she visits now.....

    I make this recipe all the time with a few changes. I use boneless breasts of chicken instead of thighs only because I always have them in the freezer. I use baby bellas, marinated and cooked with the tomatoes. And I use poblanos because they are easier for me to find. My family loves this recipe!

    We've made this meal twice now and made extra to freeze for later. It fits the whole family. It is healthy, hearty, and a little bit different. Takes a ton of dishes and knives, but worth the extra work!

    I only made the mashed potatoes in this recipe but they were delicious! Instead of using Idaho potatoes I used 2 pounds of redskins for 4 people, like Rachael Ray did on the show. Between 4 girls we managed to eat the whole batch!
