I used unpeeled red potatoes and grated Parmesan cheese with the ricotta to make the smashed. Doubled up on the marinade letting the mushrooms soak it up a bit longer made for an interesting balsamic taste when cooked. The girlfriend was impressed and even took the leftovers today for her and her friends lunch!

I prepared this yesterday noting the time carefully. It took me 55 minutes just to prep the food. (I always clean my chicken because Julia Child said that if we saw how chicken was processed, no one would ever eat it! It took me another 40 minutes to cook it all. I do not even want to go into what my kitchen looked like!!! My All Clad grill pan needed to soak overnight. The flavor was good but certainly NOT worth all the time and effort! I will never make this again.

I made this last night for dinner and my husband couldn't get enough. The potatoes were wonderful with this dish. The only thing I did differently was not add the cubanelle peppers as I couldn't find them. My hubby has asked me to put this recipe in my regular rotation as it was very easy to put together and inexpensive as I had almost everything in stock. I made marinade and put chicken and mushrooms in fridge for a couple of hours and the flavors really melded together. Great job Rachel!

Just like Rachel says, "This is DE-LISH!!" my whole family loves it. My teenager says it's the best chicken he has ever tasted. I have to agree. It's pretty darn good & SOOOO easy to make. We make chicken breast sandwiches with the same marinade. LOVE IT!!

I loved this dish--I served it for a relative who was visiting from out of town and she was very impressed with the presentation and the flavor. Trust me, this relative is the type to tell you when she's NOT impressed, so I know she was telling the truth! The only reason I gave it 4 stars instead of 5 is because I didn't think the ricotta added anything to the dish, except calories and fat. You can make the potatoes just as tasty and rich without the ricotta. (My secret is to use evaporated fat-free milk...all the creaminess, none of the fat. Plus, I never really have a need for the leftover ricotta after I use the 1 cup for the recipe, so it goes to waste. I made it a second time minus the ricotta and it was just as good. Kudos, Rachael, on the recipe--it's awesome for entertaining!

My husband is a picky eater and he typically likes just plain meat and potatoes. When I served this, he said, "Wow, Hon. This is good. You can make this again." I have and it was a hit. My daughter really liked the garlic smashed potatoes. I also used the marinade to make chicken on the grill...Yummy!

I had used skinless boneless chicken breasts. I sliced, marrinated, and then sauteed them. The dish came out wonderfully.
