Way too much onion! I loved the idea of this, but the onion was overpowering in the salsa. I would try it again using maybe half the amount of onion, or maybe try cooking them first to get a more mild flavor.

My husband & I love this! So easy an quick. We have a few of these crackers along side a cup of soup and it's a very hearty meal. Also, used the leftover salsa on a variety of othe things, as dip for corn chips, on quesadillas, etc - delicious.

This is an innovative twist on traditional chips and salsa. So cool for entertaining, no one had ever had anything like it. Warning to those with less than sophisticated grocery stores: Polenta may not be available. If not, look for "corn meal mush" in a tube. Pretty much the same thing. I sprinkled some dried seasoning on the "chips" before grilling. Turned out great.

I really enjoyed this recipe! Easy ingredients and great flavor. I would suggust roasting the garlic first - it was a little overpowering but not objectionable.

My friends loved this, easy to make, tastes great and makes a fabulous appetizer. Great way to throw something together and impress your friends. Pan fry the prepared (tube roll of polenta in butter for a quick snack for yourslef, yummy! Kids love the pan fyred polenta disc in butter.

I made this once before, and made it again the other day. This time, I changed the onion to a shallot (I like the milder flavor and added a bit less oil, but it's so very good. Overall, this is one of my favorite munchies and a definite staple. It's a quick fix with everything just getting tossed into the food processor, and you can just suit your taste on it (add more capers or parsley if you like them, etc. I eat it with the polenta chips, pita chips (I make those often, and I use it as a sandwich spread (it's a great spread for hot or cold sandwiches I've found. I may take some this time and toss it into some warm pasta for a quick sauce...
This is a must try--just let your taste lead the way.... Thanks Rachael for a great recipe with so many possibilities :

I thought this was a good recepie for those days when you want something special and yet easy to prepare. I served this and the chimichiri chicken and the lavosh pizza. After dinner hubby looked at me and said: I didn't know you could cook like that!
