    This is a great receipe for a fancy dinner party. Guests loved it and it looked like a lot of work.

    My husband, 7 year-old daughter, twin 1 year-olds, and I LOVED this recipe!! My daughter said it should be served at a restaurant. I was a little intimidated b/c i've never cooked fish at home before (I cooked chicken also "just in case" it didn't turn out--we didn't eat the chicken.... It is a super easy dish to make but so elegant. I can't wait to entertain and cook it for my company. A total winner!!
    ps. i didn't find haddock at our store, but used halibut instead. It's a wonderful white, flaky fish as well. It was great.

    I'm not usually a Rachael fan, but I really needed a new way to make haddock. This turned out to be a very nice new method. I was afraid the bacon would overpower the delicate taste of the fish, but I found that undercooking the bacon slightly reduces the salty/smoky tones (also using reduced-sodium bacon helps. I agree with those who said to go easy on the bread crumbs - a little goes a long way. Still, this is a keeper.

    I made this recipe using tilapia instead of Haddock, and it worked very well. However, when I do "real cooking," I usually make extra - so I can enjoy the fruits of my labor for another meal or two. For many dishes, this works fine, as the extra time allows flavors to blend and develop. But this dish was rather bland as leftovers. Lacked the punch it had when it was fresh out of the oven. So, if you won't be serving the full two pounds of fish right away - I recommend halving the recipe.

    You have to try it to believe it but words can't do it justice. Very simple recipe and I almost completed it in 30 minutes or less.

    Must try recipe. Rachel, thank your mom for me!
