I've been making variations of this since I first saw them on 30 minute meals. I use them as a light supper alternative and have now lost over 130 lbs. Thanks Rach!!!

My vegetarian boyfriend loves these when made with a small piece of veggie "bacon." The contrast between the crisp, cool cucumber, the creaminess of the cheese, and slightly warmed bacon is wonderful. I've made them successfully with herbed cream cheese, too. The only thing I wouldn't suggest is replacing the seedless cucumber with regular cucumber; it just isn't the same.
