    These are so simple and very delicious. I used flat-leaf parsley and sausage instead and they were a huge hit. I am vegetarian so I made a few without the meat for myself and they were very tasty as well.

    my husband and i watch rachel ray all the time and we both thought that this recipe was the best idea for my church easter brunch you really are the most down to earth cook with the best food show on t.v. thanks for the tips nicole coffey redford township mi

    I made the frittatas with thin sliced Boar's Head Buffalo Chicken Breast, Onions, and Swiss Cheese. They were so good even the kids loved them. I made them in a regular size muffin pan, too. So they were somewhat larger. Serve them up with some fruit and it makes a great meal.

    I made this as a dinner entree with roasted potatoes and a fruit salad. The canadian bacon adds a dash of salty flavor to the egg. I used a colby jack shredded cheese instead (also very good of the swiss!!! Even my kids liked it! This is definitely a make again recipe.

    I actually made these for my children's breakfast. I modified and used cheddar cheese instead of swiss. They were a hit! We will be making these often.

    I modified this recipe for weight lost purposes and it is wonderful. I have experimented with different vegetables and I use egg beaters.
