These are fantastic! So easy and quick to whip up! Next time I'll try them with cheddar cheese. I'll be making them again and again. Perfect little finger food for a brunch.

I tried this recipe to bring to my husbands office to feed him and the guys. I used my regular sized muffin tins and brought some small breakfast rolls to go with them. The guys flipped over them and the recipe made 12. Thanks Rachael!!!!! They were DE-LISH

I made these and was actually disappointed. First the egg got every where and it was very hard to clean my silicone muffin pan. The frittatas took longer than required and they were sort of bland.

I did not use the canadian ham I used virginia ham and boars head ham. They came out perfect. My children who claim they do not eat egg ate the mini frittatas.

I enjoyed this recipe becuase it was easy and so adaptable. We made a bunch of different kinds--bacon and cheese, ham and cheese and vegetarian--for our Christmas get-together. Now we'll make them and pop them in the freezer! They were very good.

I filled them too full and had egg going over the side. They were a little bland at first so after they were done, but still warm, I threw some salt on and everyone loved them!
