I used butter and non stick spray and these bland little omelets were impossible to remove from the mini muffin tins. Disappointing.

I thought Egg Beaters would be better than eggs, but I was wrong! The Egg Beater frittatas didn't brown until they'd been baked for 20 minutes (or more and then they collapsed as they cooled. The real egg ones stayed puffed up and browned in 12 minutes. I tried real eggs after I'd used a whole pint of Egg Beaters and the results were so much better!

I halved the recipe for me & my husband. I cooked 4 strips bacon then cooked some onion in some of the bacon grease. I crumbled the bacon then put the bacon, onions & 1/2 C. cheddar cheese, in a small bowl. I did the eggs as directed, 4 of them. I sprayed the muffin pan with cooking spray instead of using melted butter. They cooked for exactly 12 mins. I did the dishes while they cooked. These were very good. Will make them again, the variations are endless. Thanks.

I made this just today for my inhome daycare kids lunch... They loved it! They caled them "Eggy-Muffins" and were so excited to dip them in salsa and ketchup. Super easy and quick! I loved them too and am so glad I didn't have to make mac'n'cheese again! Thank you Rachel Ray!

I made these and also made some with turkey and pepper jack. They were so good. I put out sour cream and salsa to dip them in.

I made this for a small brunch gathering. It was great -- the food was in the oven and I got to visit with guests while it cooked. The food tasted great.

I made this to bring to a meeting. Everyone LOVED it!! Delicious recipe. It is more affordable however to make an egg casserole.

This is great when you have company for breakfast/brunch. Would be great to bring to work or church.

The recipe is simple and tasty but I can never seem to get the egg to cook all the way through in the time is is supposed to cook in. It usually takes an extra 10 minutes to cook. But overall a tasty recipe.
