This was very easy, but didn't come out tasting spectacular. I have much better frittata recipes, I think some are from Giada, maybe also Ina.

I found this recipe to be easy to make and I used it for a breakfast pot-luck and it was a big hit. I changed it to bacon and chedder cheese though.

I made these for a holiday party. They were very easy to put together and heated up well the next day. Bite size pieces, where no silverware was needed. My family and friends loved them. A must try.

Next time I won't fill my mini cups so full of egg mixture, maybe 3/4 or so.

These things flew off the serving tray.
They are delicious, easy to make and extremely affordable.

Used the larger muffin pans and added 5 minutes to the cooking time. Cannot wait to try the other variations. Thanks, Rachel!

We used sausage crumbled instead of ham. Cooked the night before and reheated on the grill for tailgating at KSU footbal in Manhattan, Kansas the next morning. All the kids loved!!!

I LIKE THAT THIS IS A LIMITLESS AND EASY RECIPE. ALMOST ANYTHING CAN BE ADDED TO THE EGGS.
    THIS IS A WINNER,
KIDS CAN EVEN FIX THEIR OWN ADDITIONS AND COOK ALL TOGETHER.

A big hit with my two boys (ages 6 and 2. You can also substitute cheddar cheese and deli ham. Kids will love the muffin shape.

I am currently going through chemo-therapy. For a week to a week and a half, my taste buds evaporate except for dairy products and eggs.
This was a quick and easy breakfast.
I took deli ham slices (for sandwiches, rolled them up and sliced into pinwheels. Placed the ham in the bottom of the mini muffin tin and poured the scrambled egg mixture in. I added salt and pepper on top and baked.
Turned out great! Next time I think I will add pepper jack cheese for the added flavor of the dairy and the spiceyness.
