    I've made this so many times!! mostly as a quick dinner fix. Have substituted ham for bacon, pancetta, sausage(whatever I have added a few mushrooms a time or two but basically anyway you look at it, the primary recipe is yummy - and yet leaves room for imagination!

    My favorite dish is fried eggs with Iberico ham and French potatoes. So, whenever I see a delicious recipe like this one, I like to use the Spanish ham called jamon iberico de bellota.

    I tried this today and wow! I need use more Basil and Tomatoes from my garden anyways. The tomatoes were sweet after cooking YUM!. Just a great breakfast overall.

    The husband and I LOVED this. I had to make a few substitutions, and I used homemade pesto. SO YUMMY and so FAST!!! This meal didn't even take 30 minutes, start to finish. Don't shy on cooking the potatoes for 10 minutes, ours were a bit crunchy the first time round. I made this for breakfast/lunch the next day!

    This was quite easy to make. I didn't have all the ingredients on hand, but made some substitutions and it turned out as delicious! I will definitely make this again!

    My husband and I don't like onions, so I used a clove of garlic instead. Otherwise, I followed the recipe exactly, and it was sooooo good. We loved it and will definitely make it again!

    This hash was excellent! It tastes like the quality of comfort food you can expect at restaurants in New Orleans, like Commander's Palace! Will make it again and might try corned beef in place of ham just to change it up.

    I've had plenty of delicious breakfast hash before but this wasn't one of them. The flavor of the spinach ruined it for me. Just made it taste slightly bitter or "earthy". If I left it out, this dish would have been much better. The tomatoes and herbs were a nice touch as was the parm cheese.

    made this for breakfasst on New Year's. Very easy to make, but delicious. Why go out for brunch if you can make this at hime in less time
