First time I ever made just the breast. It turned out so well that I don't know if I'll ever make a whole turkey again. Made a few changes to the recipe. Brined the breast overnight with sea salt and molasses. Substituted dry sage and bay leaves. Cut the bottom off a couple bulbs of garlic and roasted them cut side down with the turkey. Took the garlic out when taking the turkey out to baste and added it to mashed potatoes. Substituted chicken stock cuz apple cider sounded grotesquely sweet. The breast turned out moist, flavorful and the skin was beautifully browned. Turkey, potatoes, and gravy got raves. The modified recipe is a keeper :

I must say I rarely post opinions on recipes, but I have to exclaim this is the best recipe ever. I've always been intimidated by cooking an entire turkey thinking it'll turn out dry.. but this recipe which was perfect for our family and tasted sooooo wonderful!! The comments by the family made me very proud to serve them such a yummy meal : WINNER WINNER WINNER

I hosted Christmas for 25 people and wanted to include turkey as one of the entrees. I have found cooking a whole turkey to be cumbersome and it is time consuming. But, I have relatives who insist on eating turkey for Thanksgiving and Xmas. I am so glad I found this recipe!!! I got rave reviews from everyone and a few of them said they would do the same (cook the turkey breasts over a whole turkey. The breasts were moist and it was a great presentation. I cooked a 5 lb. breast and a 3 lb. breast in the oven together. As others have mentioned, if you are looking for a turkey recipe, look no further. I chose this recipe above all others as it had more than 4 stars and over 200 people rated it. This one is a winner. BTW, I normally prefer darker turkey meat over the breasts, but this turned out very moist. I basted every 20 minutes (made more butter sauce than recipe called for. I also did not add the apple cider to the gravy as I didn't think it needed it.

My husband bought split turkey breasts by mistake for our Christmas dinner. I found this recipe and it was a big hit. This was the best tasting turkey I have ever made and I make a pretty good turkey. I also had to cook it longer than the 55 minutes to get it up to 170%. It was very tasty and juicy. My family was moaning with delite. The herb paste gave such a wonderful flavor I will deifinatley use it on other types of poultry. Thanks Rachel! Merry Christmas :

I made this recipe for a potluck and it turned out amazing. I added garlic to the herb paste and everyone was going on about how delicious and juicy the turkey was. This was my first attempt ever at a turkey. Will definitely use this recipe next year.

I cooked my first Thanksgiving dinner with this recipe. Everyone loved it and the scent filled the house all day. It is light and refreshing to eat. The turkey is tasty and moist enough that it does not even need gravy. I had to cook it longer than 55 minutes, but it still stayed moist. I made some envelope turkey gravy and added the pan drippings, it was delicious. You must try this recipe!

This is the first time I did not cook a whole turkey for Thankgiving and am very impressed with the texture of the turkey. Herb combination was delicious and the turkey meat is juicy.
I will definitely cook it again.
